The bread really holds its own! I tend to pile a lot of toppings on my sandwiches, sometimes with multiple flavor pairings (think pesto on one slice, and garlic rosemary vegan mayo on the other!), so the mild flavor of the One Degree Organics Bread does not detract from my preferred sandwich arrangements at all. In fact, its awesome texture accentuated the sandwich-eating experience, being just the right amount of softness for sandwich bread. Big thumbs up.

However, store-bought breads often contain way more ingredients to create different flavours, as well as preservatives to make the bread last longer. This is where it can get complicated when you're trying to determine which breads are vegan.


There are many other non-vegan ingredients, but these are more commonly found in store-bought breads. If you come across an ingredient that you are unsure of, a quick online search can usually help you determine whether or not it is vegan.


Because certain ingredients can be derived from vegan or animal-based sources (such as natural flavor), checking the ingredients list won't always give you an answer. The easiest way to make sure a store-bought bread is vegan is to buy one that is labelled vegan from a vegan bread brand.


Sprouted grain bread is made from whole grains that have been placed in an environment with specific temperature and moisture until they sprout. These sprouted grains are then used to make the bread. You can learn more about sprouted grains here.

Bread goes stale when the starch reacts with the air around it. Cooler temperatures make the starch crystallize or retrograde. Moisture in the air can also contribute to retrogradation. As crystals form on the outside of the bread, it dries out, with the edges going stale faster. This condition happens regardless of the temperature. Your loaves packaged in paper bags are most susceptible to air exposure. Preventing mold growth is a smart investment for your entire store. Everything from your produce to your dairy will last longer with cleaner air.


Humidity is another balancing act when keeping bread fresh. A bit of moisture keeps bread fresh. Too much can make it go stale, and crust go soft. A recipe with a lot of salt can absorb moisture from the air if the humidity is too high. Humidity also creates an ideal environment for mold to flourish. The best condition for baked goods is a relative humidity of under 50%.


In the sliced bread section, where goods can last for several days to a week in their plastic packaging, keep careful watch over expiration dates. Organize the shelves according to first-in-first-out principles, with the oldest bags in the closest reach. This organization encourages customers to buy the products before they expire to minimize inventory shrinkage.


When stocking bread, pay attention to the dates on the labels. Some bread brands may use different types of quality, freshness and expiration dates. These variations can be confusing to consumers, and a grocer who sells several brands must keep track of what each date means.


Freezing lets us ship our delicious premium bread products all over the country. If desired, you may continue to store it frozen on-site and bake it in your commercial bakery as needed. Once thawed, it has a similar shelf life to non-frozen bread. Unlike refrigeration, freezing baked goods does not quicken retrogradation.
